Grilled Chicken Penne with Spinach, Sun-Dried Tomatoes, Olives & Goat Cheese

This recipe is so delicious and can be made in fifteen to twenty minutes, albeit if you aren't distracted by Gilmore Girls streaming on your laptop while making it. (Oops! Haha). It serves four, but Quinn and I like to make it up and then pack the leftovers for lunch the next day. Enjoy!



Grilled Chicken Penne with Spinach, Sun-Dried Tomatoes, Olives & Goat Cheese

Easy, healthy delicious pasta dish that can be made under twenty minutes and is packed with flavour.

Ingredients:
  • Small package of baby spinach
  • 2-3 chicken breasts
  • 1 small log of goat cheese
  • 1/2 cup of kalamata olives
  • 4 1/2 cups of penne pasta
  • 1 cup of sundried tomatoes in olive oil, julienne cut
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp of virgin coconut oil (or your cooking oil of choice)
Instructions:

  1. Bring a large pot of water to boil, uncover and add a dash of salt and penne pasta. Cook on medium-high for approximately 8 minutes.
  2. Heat a skillet over medium-high heat. Slice chicken in half horizontally to form thin fillets and sprinkle with oregano, basil, salt, and pepper.
  3. Add oil to the skillet and cook chicken for approximately 2-3 minutes on each side.
  4. Drain pasta when it is done cooking, keep 1/2 cup of the reserved pasta water.
  5. Cut the chicken into bite-sized pieces and add to the pasta. Add spinach, olives, and sun-dried tomatoes. Toss the pasta, and add sprinkle the goat cheese in and on top.
  6. Enjoy!
